  2. Take 3 lb beef pot roast

Steps to make Pot Roast:
  1. Coat roast with flour, salt, pepper, thyme, oregano, & garlic.
  2. Sear outside of roast in skillet (optional) by placing some oil in the skillet and browning all sides using tongs. Don't forget about the ends!
  3. Place potatoes in crock.
  4. Place roast and scrape all drippings from skillet in to crock.
  5. Filter mushrooms in spare spaces in crock.
  6. Add carrots, celery, & onions (in that order) to crock.
  7. Pour broth over it all. Add more if the pot gets dry while cooking.
  8. Cover and cook on low for 10-12 hours for the best results, or on high for 6-8 hours if you're in a rush.
