You'll need two pie crusts for this recipe, you can either use my homemade pie crust recipe (linked in the recipe below) or use store-bought. This mini apple pie uses Granny Smith apples. I bought the mini pie dishes online, and they are really fun! I love these mini pies because I can serve several different types together and everyone can select their favorite.

Instructions to make Mini Apple pocket pie:
  1. Make the dough. Cut the butter into the flour. Do not knead. Keep on cutting until butter is incorporated with the flour.
  2. Add salt. Slowly add the cold water. Using your hands knead the flour and water. Dash some extra flour if its sticky.
  3. Refrigerate for 4hrs
  4. In a pan, saute sweet apples. Add sugar and cinnamon powder. Add water. Let it boil for 5 minutes. On a seperate bowl scoop a small amoint of thr juice then mix the cornstarch. Place it back to the pan.
  5. When apple sauce are thick enough,remove from heat. Let it cool for 20mins.
  6. Pastry. On a floured table using a rolling pin, make 8 cuts with 5x3 inches size from the pastry.
  7. Scoop some cooked apples on your pastry. Make sure nothing spills on the sides. Fold the pastry covering the apples. Press down the sides. Make a mark using a form. Make some holes in the middle of the pastry too using fork. Brush some egg for browning.
  8. Pre heat oven. Bake for 30-45 minutes
  9. Dash some cinnamon powder on top,optional
